Try This: Sample some local Lisbon wine with a glass of Maria Joaquino white. Begin with either the marinated quail with garlic-flavored toasts, or the veal croquettes served with old-style mustard. For your entrée, the bacalhaua bras is an excellent choice—a tower of fried cod with scrambled eggs, black pitted olives, and matchstick french fries. Finish off your meal with the liquor and orange mousse, with dark and orange chocolate wafers.
